Fresh Tomato Salsa with
Smoked Garlic
2 cups diced Tomatoes
½ cup diced Tomatillos (optional)
½ cup diced Red Onion
3 cloves Smoked Garlic
1 small jalapeno pepper, seeded and minced
½ cup chopped Cilantro
1-Tablespoon Fresh Lime Juice
¼ cup rice wine vinegar
1-Teaspoon Sugar
1-Teaspoon Coarse Salt
1/8-Teaspoon Freshly Ground Black Pepper
Mix all ingredients in a bowl. Allow salsa to set 1 hour before serving so
flavors develop. Serve at room temperature. Makes 3 cups.
