Smoked Greek Garlic Sauce
5 slices of White Bread, crust removed and torn into
pieces
Water
5 Large Smoked Garlic cloves
1/4 cup sliced Blanched Almonds, ground fine in a food processor
Salt
1/2 cup plus 2 tablespoons Extra-Virgin olive oil
6 tablespoons fresh lemon juice
In a small bowl, soak bread in 1/4 cup of water 15 minutes then squeeze out
excess water.
Chop Smoked Garlic cloves and place in a food processor along with almonds,
bread and salt to taste. Puree until fluffy and very smooth. With motor running,
add oil in a slow stream, blending until sauce is emulsified. Blend in lemon
juice.
Transfer dipping sauce to a small bowl and serve.
